Chicken on a Can

People required to devour: 4-6

 

1 x 1.8 kg  chicken

olive oil

1 x 330 ml can of drink (beer, Coke, lemonade, whatever you prefer)

2 tablespoons barbecue sauce

1 fresh red chilli, deseeded

1 bunch of spring onions

½ a bunch coriander

For the rub:

1 heaped tablespoon smoked paprika

1 heaped teaspoon cayenne pepper

1 heaped tablespoon fennel seeds

1 heaped tablespoon coriander seeds

1 teaspoon cumin seeds

1-2 dried red chillies

1 heaped teaspoon sea salt

1 heaped tablespoon freshly ground black pepper

1 heaped tablespoon soft dark brown sugar

 

To begin...

Preheat the oven to 200ºC

  1. Begin by making a powder from the rub ingredients. Rub oil over chicken and then coat chicken in the powders.

  2. Leave 1/3 of the liquid in can before placing the chicken on top of it. Put the chicken and can on a baking tray in the oven and cook for 1hr 10mins.

  3. Take chicken out of oven and brush with BBQ sauce before putting it back in for a further 10mins.

  4. Sprinkle the chili, onions and coriander over the chicken and serve.
