Chili Con Carne

Inspiration borrowed from Mum, who borrowed it from a friend of a friend

People required to devour: 4

 

420g tin red kidney beans, drained

2 tablespoons oil

2 onions, finely chopped

2 teaspoons crushed garlic

500g minced beef

425g can chopped tomatoes

3 tablespoons

1/2 teaspoon chilli powder

1/2 teaspoon cumin ground

1 cup beef stock

 

  1. Heat oil in a large saucepan.

  2. Add onion and garlic to pan, cook until lightly browned.

  3. Add minced beef to pan and cook until browned.

  4. Add remaining ingredients. Bring to the boil, reduce and simmer uncovered for 20 minutes.

  5. Serve with jacket potatoes, sour cream and chives.
