Potato Cashew Salad
Inspiration borrowed from Mum, who borrowed it from Nan
People required to devour: 4-6
Ingredients
1/2 cup mayonnaise
1/4 cup sour cream
salt and pepper to taste
750g can Tiny Taters
2 tablespoons oil
1 tablespoon vinegar
1 stalk vinegar
4 spring onions
3/4 cup cashews
1 tablespoon chopped fresh mint
Parsley (optional)

Place mayonnaise in a bowl. Add the sour cream and mix until well combined. Season to taste with salt and pepper.

Place tiny taters in bowl in microwave for 1-2 minutes, or until just warm.

Add oil and vinegar to the taters and toss lightly. Allow to cool.

Add all the remaining salad ingredients. Pour over the prepared dressing and mix lightly until well combined.

Spoon into a serving bowl and serve sprinkled with chopped parsley.
