The Best Quinoa Salad
People required to devour: as a meal, 4ish but could do up to 10 as a side
1 packet of microwave quinoa and brown rice mix
1/4 cup sultanas or raisins
400g can chickpeas (rinsed and drained)
200g Greek style feta (cut into small cubes or crumbled)
1 apple (diced)
1/2 cup toasted almonds
large handful of parsely (chopped)
Dressing
1/4 cup olive oil
1/4 cup rice wine vinegar
2 teaspoons brown sugar
1/4 teaspoon curry powder
- To make the dressing, place all ingredients in a jar and shake well.
- Place sultanas in a bowl and cover with cooked quinoa. Leave to cool.
- To the bowl, add chickpeas, feta, apple and parsley. Stir together.
- Stir through dressing. Add almonds just before serving.
